Thai Seafood Salad

I made this tonight for dinner and it was YUMMY. And oblivi easy if I didn't mess it up, ha. Adapted from a recipe in Cooking Light.

 1/4 cup of water
6-8 ounces of sea scallops
1lb-ish of shrimp (peeled and deveined, pref pre-cooked if you're short on time like me)
5 tablespoons of fresh lime juice (about 4-5 limes small limes)
1 tablespoon of Thai chili paste with garlic
2 1/2 tablespoons of fish sauce
1 cup red bell pepper strips
1/2 cup chopped red onion
1 cucumber, halved and sliced

1. bring water to simmer. add scallops to pan, cover and cook for 3 minutes. remove and pat dry. cook shrimp in pan for 3 minutes (unless using pre-cooked). drain and place in large bowl with scallops. I let the scallops and shrimp cool in the fridge while making the rest of the recipe.

2. combine lime juice, fish sauce, and chili paste in bowl. Stir sauce in with shrimp and scallops.

3. Add bell pepper, onion, and cucumber into mixture and toss.

At just 180 calories dinner is done!
